Whats the best way to cool card.

I wont to o/c my 9800pro more than i currently am, problem is i dont want to deep fry my card!.....had to put of holiday with the miss's to get it!!!!
Now i know of the ramsink thingys that cool the ram but what about them things that go ontop and under the card, are they any good?
Also do fans help, if i side mounted a fan would it cool the card?
I intend to get a heat probe so i can keep a tab on temps of my card so i will hopefully be able to o/c with out putting my card to a early grave.
Any help or advice would be happily recieved!

If you're not OCing then it probably ok with stock cooling. But from my experience a side fan is the best way to drop temps.

cooling on the back side of the GPU! highly recomended
also, blow hole sucking air in and blowing over card helps
as well as ram sinks

Thanks guys, just ordered some ram heatsinks and my mate is popping round to check my case out to see where he can postion fans, he's good at that stuff, i aint!
