Can I plug a XBox into my X1900XT
and play games using my monitor instead of a TV.

You could, but I don't believe you'd be happy with that setup. The video card's Video IN is restricted to video capturing through the T200 Unified AVStreaming Driver. You'll be restricted to using Composite video, a windowed environment and the clarity just won't be there for your game like it is on the TV.

If your monitor has a DVI connection, that would be a much better choice.

Eh, if your monitor has a VGA input connection, you can easily connect the xbox 360 to it with the VGA connector, sold seperately.
In fact I have my 360 connected only to my samsung tft monitor and it looks very good.
