"Smart" email client?

Is there any email program that can watch the decisions you make (to keep or delete mail) over a period of time and build a list of rules off of what you do? I mean this in an automated kind of way as opposed to blocking every person you do not want to get mail from or filtering keywords.

That sounds like "Bayesian spam filtering"

Start here
http://email.about.com/cs/bayesianspamsw/

Most of these tools, though, tend to be geared to making a training run, and then re-training or adjusting when required - some can also have criteria set to force whitelisting or blacklisting regardless of the bayesian analysis.
For reliability, you MUST use whatever method is required to put correction through it, and not just shuffle messages to or from the spam bucket - if you don't teach it, it won't learn!

It is also rumoured that spammers are working out anti-bayesian tricks, such as using a conversational tone.

Be careful too, if there are adverts you DO want, then it's better to force-whitelist the senders, as placing a similar class of material as both spam and non-spam will weaken the filtering.
