Put simply...

...it makes things far away or at an angle less blurry and much more clear and sharp. There is also generally a performance hit for the extra pretty though...

System Specs

I thought the performance hit wasn't too much though, for just anisotropic filtering

It really depends on your card. I've heard that ATI is a LOT less of a performance hit on AF than nVidia, but on me 8500 it don't matter much to me since I can't do AF & trilinear.

But the 9700 & 9500 Pro are supposed to be NUTZ with AF, like damn near no hit for it and it's stunning. I haven't seen it for myself, so I can't really say. I don't even know if the GF4s are supposed to be better with it than the GF3s! (I have GOT to get me a newer video card, SOON!)

For me (nearly only playing in 1280x1024) on my GF4 4600 there is a est. 30% performance-hit in current games - but I think it`s worth it

Oh, numbers?

I benched 3dm2k1se forcing 2x & 4x aniso once to see. I lost about 500 onions at each level. (2x=-500, 4x=-1000)

Some games have more of a hit than others, but some have practically no impact. "Mafia" doesn't seem to notice 2x turned on and barely notices 4x, but it's a pretty CPU/memory limited game I think. (I don't know too much about how it works yet, I'm still having too much fun playing it. )
