Ok, I'd say go for Redhat. It's a very nice version of Linux and you can fin a lot of information on the OS on thier website here http://www.redhat.com/. If you do have two different hard drives and you would like to install Linux to one and keep WindowsXP on one that is rather easy, all the options are laid out for you during the Redhat Linux installation. That's exactly what I did and the Linux will automatically create a dual boot OS for you meaning it will prompt you to choose which OS you would like to boot into during your computers boot up. If you would like to uninstall Linux all you really have to do is rewrite your MBR which is pretty easy.
About your NIC card, it all depends who makes it and if they do have any Linux drivers out for it....Redhat may also have default drivers that will work with it but thats not a gurantee. Hope that helps a bit.
