almost monumental moment (for the cook in me)
very , very sad, I know.
but for a cook like me, this was a big deal. today, for the first time in ten years, I took the wire wool to my beloved wok and cleaned it up like new.... needed done, it had been neglected of late. but damn, it's gonna take some work to get it seasoned properly again ![]() soooo... any other cooks out there in DH world ?? |

A wok is fair game, it only takes a few meals to season it again, especially if your using peanut oil. I try not to use animal fats when I cook so they clean up pretty fast, A good wok will get a fine patina in a week or two, then as long as you dont use too much starch when you cook you can keep it clean often enough. I have two woks and both came from Japan. I had to clean one because I found oxidation in the center and it demanded a good cleaning, but it seasoned up well enough.
