Help me Cook!!!!!!!!!!!!
please post recipes of anything edible. It doesn't have to be fantabulous but it sure helps if it is..... jk!!!! seriously, anything is fine as long as it has been tried and tasted!!!

TANGY TUNA SALAD SANDWICH
1 (6 1/2 oz.) can water pack tuna 1/4 c. low-fat yogurt 1/2 c. celery, diced 2 tbsp. low-cal mayonnaise 1/2 c. green onion, sliced 1/4 tsp. ground black pepper Drain tuna thoroughly. In a small bowl, break tuna into small chunks with a fork. Stir in remaining ingredients. Cover, and store in refrigerator. Serve with mixed-grain bread, pile on lettuce and sprouts for extra crunch. Makes 4 (1/2 cup) servings.

Lemon Chicken
A good portion of Chicken Breast cut into thin strips. A pack of Green Beans 1 Lemon Ginger Root (Fresh or Powdered) Soy Sauce Toasted Sesame Oil 2 teaspoons of Sugar Dead easy to make. Heat 2 tablespoons worth of oil in a wok (high heat). Add the chicken and stir fry for 2-3 minutes until lightly browned. Add the green beans and fry another minute or so. Half the lemons and squeeze the juice into the pan. Add a teaspoon or 2 of sugar. Fry for another minute. Add 3-4 tablespoons of soy sauce and the ginger. Fry for another 2-3 minutes. You can also add some fresh chillis for colour & heat. Serve with some rice or chinese pancakes. Last edited by Jac; Jun 3, 2010 at 07:45 PM. |

grab some chicken breasts....
throw em in a pan.. grab some medium or mild large jar of salsa (8oz or so) and dump it in. throw other vegitables or potatoes of your choosing on top of it all and slap in the oven and cook until the chicken center juices run clear (most usually cook at 350F for 40-60 minutes in a conventional oven) serve with a slice of cheese or 2 on top.... enjoy

Potato Wedges!
The staple of my diet: Chop 3-4 medium potatoes into wedges, Take a large bowl add a few glugs of olive oil, but not too much. Add quite a bit of salt and pepper and some herbs (fresh rosemary or just some mixed dried herbs) Add wedges and agitate round bowl until all are covered. Cook at 200°C for 25 minutes turn over and cook for another 20. Perfect wedges every time.... and that's the limit of my skills. |

Leek soup
Make conventional mashed patatoes of about 3. cook 3 sliced patatoes add some butter and milk mash em add some grinded nutmeg slice 1 leek slice an onion put in pan until almost done (about 5 minutes) add water of about the height of the leeks. add the mashed patatoes add some dried or fresh Majoram. add a veg. stock cube (or two, dependend on your liking) done! very good with some bread.

The Señor's Ultimate BBQ Slather
It's not a sauce, it's a slather. Trust me. 2 cups tomato sauce, garden fresh made, preferably 1 1/4 cups applesauce 2 tbs. butter, unsalted 2 whole cloves fresh garlic, smashed 1/2 white onion, diced finely 1 pinch Sea Salt 1 tbs. black pepper, fresh ground 1/2 tsp. cinnamon, fresh ground 3 tbs. brown sugar 1/2 tsp. Allspice 1/4 tsp. Liquid Smoke(use SPARINGLY!) 1 tbs. Ancho chili powder, fresh ground 1 tbs. New Mexico chili powder, fresh ground 1/2 tsp. cumin 1/2 tsp. paprika 1/2 tsp. cayenne pepper, fresh ground 1/2 pinch white pepper 2 tbs. rice wine vinegar 2 tbs. molasses 1 1/2 tbs. honey, fresh 2 tbs. Dr. Pepper Start by sweating the onions, garlic, salt, black pepper and white pepper together with the butter in the bottom of your slather pot. Once the aromatics are slightly see-through, add the vinegar, 1/2 tbs. honey, 1 tbs. molasses and stir for 1 minute. Proceed to incorporate the tomato sauce slowly along with the applesauce on Med-Lo heat in the next minute or so, stirring and scraping your slather pot. Once that's stirred, add the remaining ingredients, including the remaining honey and molasses and let the slather sit on Med-Lo heat for about 45 minutes, stirring occasionally. Brush excessively on ribs, brisket, chicken, shrimp, steak, burgers, anything. It's good on ice cream...I'm sure. |

1) seekh kebad fry
Ingredients * 1/4 cup oil * 1 tsp garlic ginger paste * 2 tbsp ginger cut into thin strips like for Nihari * 1 tsp red chili powder * 1/2 tsp garam masala * 2 cup chopped tomatoes * 8 ready made seekh kebabas (if they r to big cut them into 2 halves) * 1/ cup chopped dhaniya * 4-5 green chilli chopped into 1/2 inch pieces * 1/4 cup cream Directions 1. In a Karhai heat the oil and fry the ginger, garlic paste. 2. Add 1 tsp ginger strips, chili powder, garam masala & tomatoes & toss fry for 5 min or until tomatoes are a bit mushy. 3. Add seekh kebabs & toss fry for 3 min allow the gravy to slightly dry out & oil to float on top. 4. Add green chilli, dhanya & cream toss for a min & remove from heat. 5. Serve hot with hot Naans. 2) NAAN BREAD 2 cup all purpose flour 1 1/2 teaspoons instant dry yeast 1/4 teaspoon salt 1/2 cup water Combine ingredients to form a dough and allow to rise until doubled in bulk, about 1 hour. Punch dough down and divide it into 10 parts. Roll each into a thin circle. Brush one side with water. Spray griddle with olive oil spray. Put circles on hot griddle, watered side up. Bake until half done-lightly browned, about three minutes. Transfer to a cookie sheet. Bake in 400 degree oven until done (about 5 to 10 minutes) or use broiler for about 1 minute to finish cooking.

Chicken Lollipop ingredients * 5 chicken drumettes * 1 tsp minced ginger shopping list * 1 cube fermented red beancurd, mashed ( optional, all-purpose cajun seasoning is great too ) shopping list * 1 egg white shopping list * 1 egg yolk shopping list * shaoxing wine ( OR other chinese cooking wine ) shopping list * ground black pepper shopping list * salt and sugar to taste shopping list * cornflour shopping list * panko breadcrumbs shopping list How to make it * With a knife, pull and scrape the meat off the top to the bottom of the chicken drumette. * Marinate the chicken with minced ginger, mashed fermented red beancurd, egg white, black pepper, salt and sugar. * Set the chicken in the refrigerator and let it marinate for about 10 minutes. * Dip the chicken drumettes into the cornflour, then dip them into the egg yolk wash, and continue the same with the breadcrumbs. * ( TIP : Quick chill in the freezer while the oil is heating up on the frying wok, to prevent breadcrumbs from falling off into the oil while frying ) * Deep fry the chicken drumettes on medium-high heat until golden brown.

Meatloaf
Ingredients: 1/2 cup bread crumbs 1 1/2 pounds lean ground beef 1 cup milk 1 large egg 1/4 cup chopped onion 1/2 teaspoon dry mustard 1 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon ground sage 1/8 teaspoon garlic powder 1/2 cup barbecue sauce 1 Tablespoon Worcestershire sauce Directions: 1. Preheat oven to 350 degrees F. 2. Mix all the ingredients except the barbecue sauce together, then spread the meatloaf mixture into an ungreased loaf pan. 3. Spoon barbecue sauce on the top of the meatloaf and bake, uncovered, for 1 hour.

Chinese Chicken Wings Ingredients: 18 chicken wings 3 garlic cloves, minced Ground ginger 1 1/2 teaspoons five spice powder 1/2 cup soy sauce 1/2 cup white wine 1/4 cup vegetable oil Directions: 1. Combine garlic, ginger, five-spice powder, soy sauce, white wine and oil. Stir well. 2. Add chicken wings to marinade and marinate for at least 1 hour. 3. Bake at 350F for 30-40 minutes. Pina Colada Flan
Ingredients * 1 cup white sugar * * 8 beaten eggs * 2 (15 ounce) cans sweetened cream of coconut (such as Coco Lopez®) * 1 (14 ounce) can sweetened condensed milk * 5 tablespoons pineapple juice * 1 tablespoon shaved coconut (toasted if desired) (optional) Directions 1. Preheat oven to 350 degrees F (175 degrees C). 2. Place sugar in a small saucepan over medium heat. Cook gently, without stirring, but shaking occasionally until the sugar has melted. Continue cooking until the sugar has completely melted and turned golden brown. Pour into a large round glass baking dish. Spread the caramel evenly over the bottom of the dish, then set aside to cool for 15 minutes before proceeding. 3. In a bowl, whisk together eggs, cream of coconut, condensed milk, and pineapple juice until thoroughly combined and smooth. Pour the egg mixture over the caramel in the baking dish. Place a kitchen towel in a large roasting pan, and set the baking dish on the towel. Place the roasting pan into the preheated oven, and carefully fill the roasting pan with water about halfway up the side of the flan dish. 4. Bake until a knife inserted in the center of the flan comes out clean, about 1 hour. 5. Remove roasting pan from oven, and allow the flan to cool sitting in its water bath, about 30 minutes. Refrigerate the flan until thoroughly cold, at least 2 hours. To unmold, run a knife all around the edge of the flan to loosen the sides. Place a serving platter on the dish, and quickly flip the pan over to remove the flan onto the platter. Spoon any liquid caramel from the baking dish over the flan, and allow the caramel sauce to pool around the flan. Sprinkle with shaved coconut, and refrigerate until serving. Footnotes * * Cook's Note * The colder it is, the thicker the texture will be. It won't have that funny egg texture that most restaurant flans have. * Look for cream of coconut in the Hispanic food section of the grocery store. It is not the same as unsweetened, Asian-style coconut cream. * Easy tips will help you make a perfect flan every time.

1) Avocado and Cucumber Salad Recipe Ingredients: * 2 Cucumbers, cubed * 2 Avocados, cubed * 1 clove Garlic, minced * 4 tablespoons Fresh Cilantro, chopped * 2 tablespoons Green Onions, minced * 1/4 teaspoon Salt * Fresh Ground Pepper to taste * 1/4 large Lemon * 1 Lime Directions: In a large bowl, combine cucumbers, avocados, and cilantro. Stir in remaining ingredients, squeezing lemon and lime over the top and toss. 2. Cover, and refrigerate 30 minutes before serving. 2) Avocado Chicken Salad Recipe Ingredients: * 3 Avocados - peeled, pitted and diced * 1 pound Grilled Skinless, Boneless Chicken Breast, diced * 1/2 cup Red Onion, finely chopped * 1/2 cup Fresh Cilantro, chopped * 1/4 cup vinegar * 1 teaspoon salt * 1/2 teaspoon dill weed * 1/2 teaspoon sugar Directions: 1. Grill diced chicken breast by placing under oven broiler until slightly browned. Time will vary but around 7 minutes. Just watch for slight browning around edges of chicken. 2. In a small bowl combine vinegar, salt, dill and sugar. Mix well. 3. In a medium bowl, combine the avocados, chicken, onion and cilantro. Pour the vinegar mix over the top and toss lightly to coat. Note: Taste the vinegar mix before pouring over the chicken. If it is too sharp, tone it down by adding water, sugar and salt to taste. 3) Tropical Avocado Salsa Recipe Ingredients: * 1 Avocado, seeded, peeled and diced * 1 papaya diced * 1 mango, diced * 1Tablespoon cilantro, chopped course * 1/2 cup bell peppers, mixed red and yellow * 1 tablespoon jalapeno peppers, minced * juice of one lime * salt and pepper to taste Directions: 1. Mix all ingredients together well and chill for 1/2 hour before serving. Serve with chips or crackers as an appitizer. 4) Avocado Salsa Recipe Ingredients: * 2 medium avocados, peeled, pitted, diced * 2 medium tomatoes, diced * 2 tbsp lime juice * 1 small onion, diced * 1 tbsp cilantro, chopped * 1 tsp green chile pepper, chopped (jalapeno if you want spicy) * 1/2 tsp salt Directions: 1. Combine all ingredients and mix well. Taste and add salt if needed. 2. Cover and refrigerate for a minimum of 30 minutes before serving. 5) Avocado Dip Recipe Ingredients: * 3 ripe avocados (peeled and mashed) * 3 tablespoons lemon juice * 1 tomato (finely chopped) * 2 packages (8oz each) cream cheese, softened * 1 cup Cheddar cheese (grated) * 1 tablespoon tabasco sauce * 1 tablespoon mayonnaise * 1/2 teaspoon crushed red pepper * 1/4 teaspoon garlic salt * 1/4 teaspoon onion salt * 3/4 teaspoon salt Directions: Combine avocados, lemon juice and tomato and mix thoroughly. Blend remaining ingredients in separate bowl then fold in avocado mix. Chill for 1/2 hour before serving. Makes about 4 cups. 6) Avocado Asparagus Salad Recipe Ingredients: * 2 lb of asparagus * 2 medium avocados * Juice and zest of 1 lemon * 2 tablespoons olive oil * 1 tablespoon white vinegar * 1/2 tablespoon of balsamic vinegar * 2 tablespoons fresh parsley * 1 tablespoon fresh coriander * 1 teaspoon of fresh mint * 1 teaspoon of sugar * Salt and pepper, to taste Directions: 1. Trim asparagus and steam until tender and bright green. 2. Remove asparagus and place in cold water. Drain and set aside. 3. Peel the avocados and dice. Combine with the lemon juice and zest, then add to the asparagus. 4. Make the dressing by combining the white vinegar, balsamic vinegar, olive oil, sugar, mint and parsley. 5. Add salt and pepper to taste, then pour over the asparagus. 6. Toss lightly, cool in refrigerator for 1/2 hour before serving. 7) Avocado Tomato Salad Recipe Ingredients: * 5 tomatoes, quartered * 2 avocados, peeled, pitted, chopped in bite size pieces * 2 tablespoons extra-virgin olive oil * juice of one lemon * 1/3 cup red onion, sliced * 1/4 cup pine nuts, toasted light brown in the oven * 1/3 cup Parmesan cheese * Italian Salad Dressing (optional) Directions: 1. Place tomatoes, onion and avocado in a large bowl. Drizzle with olive oil. Add lemon juice and salt. Mix well. 2. Refrigerate for 30 minutes. 3. Remove from refrigerator and transfer to individual serving salad bowls. Cover top with pine nuts and Parmesan cheese. 4. Allow each person to add Italian dressing at the table if desired. Makes 4 servings 8) Avocado Omelet Recipe Ingredients: * 2 eggs * 1 tbsp. water * 1/4 tsp. salt * 1 tbsp. butter * 1/2 ripe avocado, peeled and sliced * 3 thin slices tomato * 1 slice of Swiss cheese, cut into strips * 2 tbsp. plain yogurt Directions: 1. Mix eggs, water and salt in small bowl. 2. Heat butter in 8" omelet pan until hot. 3. Pour in egg mixture. Tilt and roll pan occasionally so uncooked eggs can flow to the bottom. 4. As eggs firm, place avocado, tomato slices, and cheese on half of omelet. Fold omelet over and turn out on plate. 5. Top with yogurt and serve immediately. 9) Avocado Pasta Recipe Ingredients: * 1 Pound cooked fettuccine or your favorite pasta * 2 teaspoons olive oil * 1 Cup diced green bell peppers * 1/2 teaspoon dill weed * 1/4 Cup white vinegar * 1/2 Cup chopped fresh basil * 1/2 Cup chopped green onion * 1 Cup sundried tomatoes, diced * 1 Avocado, diced (divided) Directions: 1. Cook pasta in boiling water about 6 minutes or until tender. Drain well. 2. In a large bowl, combine all ingredients with the pasta, reserving 1/4 cup of the avocado. 3. Toss together well to ensure an even coat of the oil and vinegar. 4. Top with the remaining avocado as a garnish. 4 servings 10) Avocado Lime Pie Recipe Ingredients: * 1 can sweetened condensed milk * 1 medium sized avocado, chopped * 3 1/2 oz. fresh squeezed lime juice * 1 cup whipping cream * pre-made graham cracker pie crust Directions: Grahan Cracker Pie crust may be pre-made from store or make your own if you prefer. 1. In a blender mix milk, avocado and lime juice until well blended. 2. Pour immediately into the graham cracker pie crust. 3. Add unsweetened whipped cream on top and refrigerate for 2 hours. 11) Avocado Fruity Smoothie Recipe Ingredients: * 1 avocado, peeled, chopped course * 2 bananas * 2 cups orange juice * 1 cup of strawberries * 1 cup of orange or strawberry sherbet * 1 cup ice Directions: 1. Combine all ingredients in a blender and blend until smooth. Serve immediately while ice cold. Options: You may substitute your favorite berries (raspberries, blueberries, your choice). Fresh is better but frozen berries may be used. Regular Vanila ice cream may be substituted for the sherbet. 12) Avocado Soup Recipe Ingredients: * 2 ripe avocados, peeled and creamed in a blender * 4 cups chicken broth * 2 tablespoons lime juice * 1/2 teaspoon cayenne pepper * salt and black pepper to taste * chives for garnish (optional) Directions: 1. Process avocados in a food processor or blender until they are a smooth paste. 2. Add the avocado paste to the chicken broth, stirring well. 3. Add the remaining ingredients, mix thoroughly. 4. Taste and adjust salt and pepper as needed. 5. Chill in the refrigerator for one hour before serving. Garnish with fresh chives and diced avocado bits and serve cold. 13) Avocado Egg Burittos Recipe Ingredients: * flour tortillas * 1 Cup bell pepper,diced (red, green or mixed) * 1/3 Cup chopped onion * 3 Tablespoons butter * 8 eggs * 1/4 teaspoon salt * 1/2 Cup Pepper Jack cheese, shredded (or your favorite cheese) * 1 Avocado, diced * Sour cream and your favorite salsa for garnish Directions: 1. Wrap tortillas in foil; warm in a 400 degree F oven. 2. Saute bell pepper and onion in butter until soft, about 5 minutes. 3. Beat eggs and salt together. 4. Add eggs into pan with bell peppers and onion. 5. Add avocado and cook, over medium-low heat, stirring constantly, until soft curds form, about 3 minutes. 6. Put 1/4 of the egg mixture in the center of one warmed tortilla; sprinkle with 2 tablespoons shredded cheese. 7. Fold in top and bottom of each tortilla. Roll up from side. Repeat with each tortilla and garnish with a tablespoon of sour cream and a spoonful of salsa. Makes 4 burittos.

Beef Lo Mein
Beef and egg noodles are tossed in a flavorful oyster sauce. Ingredients: * 3/4 pound flank steak * Marinade: * 1 tablespoon soy sauce * 1 1/2 teaspoons cornstarch * Sauce: * 2 tablespoons oyster sauce * 2 teaspoons dark soy sauce * 4 tablespoons beef broth * 1 teaspoon granulated sugar * Other: * 8 ounces fresh egg noodles or Italian spaghetti * 1 teaspoon sesame oil * 1 large carrot, chopped into 1/2-inch pieces * 1/2 cup chopped cabbage, such as Napa * 1 clove garlic, chopped * 4 tablespoons oil for stir-frying, or as needed Preparation: Cut the beef across the grain into thin strips. Add the marinade ingredients. Marinate the beef for 20 minutes. While the beef is marinating, prepare the remaining ingredients. In a small bowl, combine the oyster sauce, dark soy sauce, beef broth, and sugar. Set aside. Fill a large saucepan with enough lightly salted water to cover the noodles. Bring to a boil. Add the noodles and cook, uncovered, until they are al dente. Use chopsticks or a wooden spoon to separate the noodles while they are cooking. Drain the noodles and toss with the sesame oil. Heat the wok over medium-high to high heat. Add 2 tablespoons oil. Add the beef. Brown briefly, then stir-fry until it changes color and is almost cooked. Set aside. Add 2 tablespoons oil to the wok. When the oil is hot, add the garlic. Stir-fry until fragrant, then add the carrots. Stir-fry for about 1 minute, then add the shredded cabbage and cook for 1 more minute. Add the noodles and cook for about 2 more minutes. Add the sauce to the wok. Return the beef to the pan. Mix everything together and serve hot.

Chicken Chow Mein - Healthy Baked Chicken Chow Mein
This recipe for chicken chow mein recipe has crisp noodles like you'll find in Chinese restaurants, but without the fat. Scroll down to the bottom of the directions for a nutritional breakdown. Ingredients: * 1 lb (500 g) boneless chicken breast, cut in thin strips * 1 tablespoon (15 mL) soy sauce * 1/4 (1 mL) salt * 1 tablespoon (15 mL) dry sherry * 1/4 teaspoon (1 mL) white pepper * 1 tablespoon (15 mL) cornstarch * 1 lb (500 g) Chinese-style steamed noodles or cooked thin egg noodles * 1 1/2 cups (375 mL) Chicken Stock * 1 tablespoon (15 mL) minced ginger * 1/2 cup (125 mL) thinly sliced onions * 3 large dried Chinese mushrooms, soaked and thinly sliced * 2 cups (500 mL) Chinese flowering chives or green onions, cut in quarters * 2 teaspoons (10 mL) sesame oil * 3 cups (750 mL) bean sprouts, tightly packed * Black pepper to taste Preparation: Combine chicken and marinade ingredients (soy sauce, salt, dry sherry, white pepper and cornstarch), mix well and set aside. Blanch noodles in large amount of boiling water for 1 minute or as per package instructions. Drain well and cool slightly. Fluff up noodles to allow drying. When dried, spread noodles loosely on large cookie sheet lined with aluminum foil. Heat oven broiler to medium-high. Broil noodles for about 5 minutes on each side, checking frequently, until crisped but not burned. Keep warm. Meanwhile, heat wok over high heat, add stock and bring to boil. Add ginger, onions, and mushrooms and cook for 1 minute. Add chicken and cook for 2 minutes. Stock should thicken slightly. Add flowering chives or green onions and sesame oil; stir to mix for 1 minute. (If using green onions, cook for 30 seconds). Remove from heat. Stir in bean sprouts. Season with pepper. Pour chicken mixture over noodles and serve. Serves 4.
