Chicken Taco Stew
I noticed a lot of you here are interested in cooking, so here's yet another recipe I created in my kitchen...enjoy!
===================== 5 cups water 2 stalks celery, sliced fairly thin 1 large carrot, sliced thin 1/2 can sweet peas 1.5-ish cups of shredded cheese(add to taste...I use cheddar/jack mix) 2 large chicken breasts(or 3 small ones) chopped into tiny chunks 1 packet of McCormick's Taco Seasoning 1 cup of wild rice(Uncle Ben's works great) 4 tablespoons margerine 1 tablespoon flour -In a medium sauce pan(4 quart or so) add 2 tbspoons of margerine and heat over medium until it sizzles -Add the chopped carrots and celery and cook until soft...stirring occasionally -Add flour and stir quickly until it compeltely mixes with the oil -Add water, peas, and taco seasoning, stir till seasoning mixes compeltely, then let simmer for 3-5 mins -WHILE THAT'S SIMMERING heat the other 2 tbsp margerine in a fryign pan and flash fry the chicken(cook in the butter on medium-high until oily and white on all sides....flip often with spatula) -Add chicken to the other pot with the veggies -Add cheese a small handful at a time, stirring to allow it to melt in between handfuls -Add rice, and let cook until rice is fluffy(non-crunchy)...stirring often Serve once rice is done, preferably with biscuits Makes maybe 5-10 servings, depending how hungry you are ![]() Took me 30-45 minutes to prepare, cook, and clean up Last edited by pr0digal jenius; Mar 1, 2005 at 02:12 AM. |

how does it taste w/ tortilla as a substitute for the rice and no celery?

no idea...don't have any tortillas. It's kinda watery to use like that though, I'd say 3 cups of water instead of 5 for that

Neon that doesn't sound that good, I may try it, but I do not like sweet chicken that much. Unless you fry these, I don't know how good its going to be... I think frying it would make it delicious and put it over steamed rice or some wild rice.

Well the key is the cheese mellows it out be sure to smother it ... the honey makes it sweete... the lemon add a bitterbite add the almond flavor .. the natural chicken flavor... all togeather it's pretty good... if you like lemon peper chicken or simlaur you should like this... Rice is pretty good with it... I'm unsure about anything else though Just don't heat the honey on the chicken to long! or you will end up with "carmel" chicken and it's way to strong for most people tastes.. same goes for the lemon! if you maranade it too long... you beter like to eat freash lemons... becouse your in for a pucker! ![]() I prefer my chinese, soups, and "buffalo" burgers more "buffalo" burgers rock! (it's based on gound beef before you go eww) god if you've ever ate something so good... so fatening .. and when you done it fells like thier is a ton of bricks in you stomac!
